Christina with Food Apparel back again. And what can I say? I am a serial snacker.

It’s true. It’s my only flaw ;). (Or is it a flaw? You decide.) Anyway, if there are snacks around, I will eat them, healthy or not. So, while I don’t think it’s bad to have that Trader Joe’s Mini Dark Chocolate PB Cup once in a while, it’s probably not a good idea to eat the whole container in one day. Not that I’ve ever done that……

My kids really love this simple 5-Ingredient Granola Recipe for a good snack. It’s easy, healthy, and delicious. But it’s not very good for when we are packing up into the car for some big adventure. Then more granola ends up in the car seats and on the floor than in their mouths. Not cool.

So I wanted to take that recipe and modify it for road trip style. And that’s how these granola bars were invented.

Now, there are two ways that you can make these -you can use my granola recipe (or your favorite granola recipe) and simply make a peanut butter and honey mixture for your “glue”. Or, you can go all from scratch and start from raw oats. There is a difference in the final product – when I use premade granola, the bars are a little bit crunchier and hold together really well. When I make the whole recipe from scratch using raw oats, the bars are a little bit chewier texture, and I do have to make sure I press them together really well before baking so they don’t crumble apart. So, just wanted to quickly make that differentiation so you can come up with the best results either way. I like both. Just depends if I already have granola in the cupboard or not.
