It’s Kami here ready and excited to share this light, fluffy, and crumbly apple coffee cake which I originally shared on the fabulous What’s Cooking with Ruthie. I finally hid the coffee cake out of sight since I kept breaking off little pieces every few minutes until I engulfed over half of the dish on my own. You’ve been warned.
My mom has some pretty bountiful apple trees, and I benefit greatly. She brings me large boxes of apples freshly picked from her tree, and I go crazy in the kitchen. Believe it or not, I keep the box in my cold garage and the apples last me almost a month. Those juicy, crunchy apples are thrown into recipes like my Pumpkin Apple Bread and this very tasty coffee cake.
Since I can’t be the only mom who continues to sneak candy from my kid’s Halloween collection (will it ever run out?!?!?), I’m going to keep the sugar to a minimum here. Actually, I kinda pride myself on sneaking health into recipes while keeping them tasty. This is no exception. Instead of butter, try coconut oil.
